Sonne has been with us since day one. It was part of our original lineup when we opened in 2015, and while it got a fresh look in 2024, the recipe hasn’t changed. We’ve always taken a slightly different approach to this beer, fermenting it a touch colder than traditional hefes to keep things lighter and brighter. That shift pulls back the heavier banana and spice notes, letting a softer citrus character come through instead. The result is a hefeweizen that drinks and finishes super clean, bright and way more crushable.
