Heavyweight Champ – Bourbon Barrel Aged Stout (Collaboration with Boombox Brewing) – When we have a chance to get together with the Boombox crew, we generally set a standard that we do something so ridiculous that we are uncomfortable just writing the recipe. This Imperial Stout, which started its life back in January, did exactly that. After a brief time in stainless to ferment, we transferred this beer into freshly emptied Heaven Hills Bourbon barrels and put it to rest for 9 months. Last month we brewed a fresh batch of this beer and carefully blended some of our young stout with the barrel aged version. This allowed us to dial the barrel character and final gravity to the exact profile we were looking for. On the nose you get rich dark chocolate and coffee notes, with a hint of bourbon. On the palate, look for dark chocolate and bourbon to dominate, with note of coffee, black liquorice and vanilla on the finish.
Canadian Heavyweight Champ – Maple Bourbon Barrel Aged Imperial Stout (Collaboration with Boombox Brewing) – We took our OG Heavyweight Champ and transferred it into freshly dumped Canadian Maple Syrup Bourbon Barrels to age an additional 3 months. On the nose you get rich maple, dark chocolate and coffee notes, with a hint of bourbon. On the palate, you get a full on assault of maple followed by dark chocolate and bourbon, with notes of coffee, black liquorice and vanilla on the finish. This beer is pretty much the equivalent of getting slapped in the face by a beaver tail, O’Canada!
Str8 Flexin’ – Imperial Stout (2018 & 2019 Versions) – Weighing in at a huge 11% ABV, Str8 Flexin’ is a big, full bodied stout. The carb was kept low leaving the mouth feel silky and rich. Huge aromas of chocolate fudge on the nose and balanced roasted espresso and vanilla flavours round out the palette. If you’re planning on aging any of our stouts from this winter, this would be the one. *2017 BC Beer Awards Gold Medal Winner – Imperial Stout Category.
Flex Mex – Aztec Imperial Stout – We started with Str8 Flexin’ as a base and conditioned it on an Aztec inspired spice blend of Ancho Chili, Cinnamon, Cocoa and Vanilla. The ancho provides a delicate dark fruit and raisin character along with a warmth that beautifully accents the aromatics of the cinnamon. The cocoa adds a decadent dark chocolate bitterness while the vanilla’s sweetness brings everything into balance. Expect lots of warming spices on the nose while the palate is dominated by bitter cocoa, vanilla sweetness and dried fruit.
Counting Sheep – Oatmeal Coffee Imperial Stout – This stout starts off with a complex aroma of roasted malt and coffee. A large amount of malted and flaked oats provides a velvety smooth texture with a luscious creamy head. It finishes with delicate notes of sweet chocolate balanced by a slight coffee bitterness. This is definitely not the beer you want to be drinking as a night cap or you’ll find yourself staring at the ceiling Counting Sheep. 30kg of “Riacho Doce, Brazil” coffee beans from our friends at @prototype.coffee was added. This full flavoured coffee comes from a single farm in Brazil. It’s a no nonsense rich bean loaded with dark chocolate and toasted almond flavours.
2017 Anniversary Release – Bourbon Barrel Imperial Stout – An imperial stout aged in bourbon barrels for one year and cellared another year in bottles.
2017 Anniversary Release – Rum Barrel Aged Con Leche – Con Leche imperial stout aged in rum barrels for one year and cellared for another year in bottles.
Single Barrel Death Blow – Barley Wine Aged in Bourbon Barrels – This barley wine was brewed with a simple grain bill of quality British malt and a small amount of caramel to add body. The beer pours a rich amber colour and an intentionally low carbonation allows the malt and barrel profile of the beer to be at the forefront of the palette. We barrel aged this version in Four Roses Bourbon barrels for 12 months before packaging. The result is a beer with notes of caramel, toffee, vanilla and raisins with a stern Bourbon backbone. At 11.8%, enjoy this beer now, or age to enjoy during holiday seasons to come.
Double Barrel Death Blow – Barley Wine aged in Bourbon & Port Barrels – Starting with the same base beer, we barrel aged this version in Woodford Reserve Bourbon barrels for 9 months before moving them into Port barrels for an additional 3 months. The result is a beer with notes of caramel, toffee, vanilla, dried fruit with a subtle Bourbon character and notes of currants and dried cherries from the Port Barrel aging. At 11.8%, enjoy this beer now, or age to enjoy during holiday seasons to come.
Dieu du Ciel – Péché Mortel – Péché Mortel (French for “Mortal Sin”) is an intensely black and dense beer with very pronounced roasted flavours. Coffee is infused during the brewing process intensifying the bitterness of the beer and giving it a powerful coffee taste. Péché Mortel is brewed to be savored; we invite you to drink it in moderation.
Boneyard – Bourbon Barrel Aged Suge Knite – This imperial stout pours black with a dark creamy head. It’s rich and bold with flavors of oak, whiskey, molasses and dark fruits.
Collective Arts – Origin of Darkness with Vanilla , Icelandic Sea Salt, Omnom Cocoa – A unique taste of Icelandic flavours was brought to this Origin of Darkness. Icelandic Cocao Nibs from Omnom Chocolate and Sea Salt from SaltVerk were added to the bourbon barrels with vanilla and lactose, to give a mouth watering combination of dark chocolate and vanilla, with an enjoyably salty finish.
